    Hahahaha funny name for a restaurant, in the Philippines, pok pok means prostitute. Well, the restaurant is located in the red light district of Asia so I guess the name is appropriate

    I lived on SE division from 2000-2005, I remember the little sushi window, and I remember when pok pok popped up. Today Division is a completely different place. It used to be shuttered businesses, and a few old school bars. I'm still mourning the closing of Sen Yai, that was by far my favorite, and most authentic experience.

    All new chef so take this as a lesson. If u want the real stuff, away from the cooking schools, go to the source. If u want to cook Japan, go to Japan. If thai, go to Thai. There are things, schools can't teach. I would say before schools and beyond schools, observation is one of the first teachers and the last.

    It's not crazy, but art. Most people confuse what art is. U don't need to do art to be an artist, necessary. It is anything you do with your signature on it. So chief may do things a beyond the money bottom line, because it is the art of it. Art doesn't necessary mesh well with business or even practical. He found his goldmine!!! Another point here u are your own master, when have your own business be it a restaurant or anything. If work for yourself with God as your above, u are your own master. I always felt if you have a job or work for others your are a slave. Although your slave job can pay more than your master business or visa versa. So it depends what people prefer. This life is only temporary.
